WA’s Signature Dish – Peel

Entries to WA’s next Signature Dish now open

This year’s competition will feature the best local produce from the Gascoyne, Peel, the Kimberley, and the Swan Valley and surrounds

West Australian foodies and amateur cooks have the opportunity to create a meal using the State’s best fresh produce in a bid to win the title of WA’s Signature Dish for 2015.

Agriculture and Food Minister Ken Baston today launched WA’s Signature Dish competition, which last year saw Rhiannon Birch take out the inaugural title with her lupin-crumbed Dorper lamb cutlets with sweet potato and lupin salad.

Mr Baston said the competition would showcase an array of fresh produce from Western Australia in restaurant-style dishes.

 “There is a growing trend in WA for chefs and home cooks to use the seasonal produce available to create locally inspired dishes,” he said.

 “WA’s Signature Dish offers the WA food industry the opportunity to profile their wonderful products to a local, national and international audience.”

 The regions represented in this year’s competition include the Gascoyne, Peel, the Swan Valley and surrounds, and the Kimberley.

 Foodies and amateur cooks entering the competition must use WA ingredients to represent one of the participating regions.

 Eight regional semi-finalists will compete in an event at Fraser’s Restaurant in Perth in October.  Four finalists will then be selected to compete in the grand finale event at the Margaret River Gourmet Escape on November 22, 2015.

Head judge Guillaume Brahimi returns this year alongside Rob Broadfield from The West Australian and Shane Osborn from Michelin-star Hong Kong restaurant St Betty.

The winner of WA’s Signature Dish will receive a two-day mentorship with Guillaume Brahimi at his restaurant Bistro Guillaume at Crown Perth.

The competition is organised by the Department of Agriculture and Food as part of Buy West Eat Best, a food labelling program that helps consumers identify and buy WA produce.
